ODREĐIVANJE SADRŽAJA LIKOPENA U SORTAMA SOLANUM LICOPERSICUM UZGAJANIM U PLASTENICIMA
Sažetak
Likopen je karotenoid, pigment odgovoran za boju zrelog paradajza. Cilj ovog istraživanja je da se odredi i uporedi sadržaj likopena u svežem paradajzu uzgajanom u uslovima plastenika u Srbiji (sorta Hector-F1), Severnoj Makedoniji (Hamzali-F1), Grčkoj (Optima-F1) i Turskoj (Benetar-F1). U tu svrhu je primenjena spektrofotometrijska metoda. Najveći sadržaj likopena je određen u paradajzu ugojenom u Srbiji, zatim u Turskoj, Grčkoj i Severnoj Makedoniji sa vrednostima po 1kg svežeg paradajza 81.53 mg, 76.33 mg, 27.92 mg i 13.49 mg respektivno. Rezultati su pokazali da je svež paradajz dobar izvor likopena i da se treba konzumirati u svakodnevnim obrocima.
