SADRŽAJ NATRIJUM HLORIDA I NITRITA U KONZERVAMA OD MESA U KOMADIMA NA TRŽIŠTU REPUBLIKE SRBIJE
Sažetak
Konzerve od mesa u komadima su proizvodi od mesa koje u najvećoj meri konzumiraju deca i potrošači sa specijalnim zahtevima u ishrani, zbog viskog sadržaja proteina i niskog sadržaja masti. Stoga je cilj ovog rada bio da se u ovoj grupi proizvoda od mesa ispita sadržaj natrijum hlorida i nitrita u ukupno 19 uzoraka prikupljenih od 14 najzastupnjenijih proizvođača na tržištu Republike Srbije. Činjenica da konzerve od mesa u komadima imaju visok sadržaj proteina i nizak sadržaj masti, potvrđena je u ovim istraživanjima. Sadržaj proteina u uzorcima Pilećih prsa kretao se u intervalu od 12,4 do 17,4 g/100 g, a masti od 0,92 do 3,84 g/100 g dok se u uzorcima Pica šunke sadržaj proteina kretao u intervalu od 11,5 do 14,3 g/100 g, a masti od 4,61 do 14,4 g/100 g. U 90,91% uzoraka „Pilećih prsa“ sadržaj natrijum hlorida bio je niži od 1,5%, dok je isti rezultat dobijen za 75% uzoraka Pica šunke. Rezidualni sadržaj nitrita se u uzorcima Pilećih prsa kretao u intervalu od 0,62 do 20,7 mg/kg, dok se u uzorcima Pica šunke kretao u intervalu od 3,27 do 19,2 mg/kg. Utvrđene vrednosti nitrita u svim uzorcima su ispod propisanih granica. Na osnovu svih rezultata dobijenih u ovom istraživanju može se zaključiti da proizvode deklarisane kao konzerva od mesa u komadima sa tržišta Republike Srbije slobodno mogu konzumirati sve grupe potrošača, kako sa aspekta saržaja proteina i masti, tako i sa aspekta sadržaja natrijum hlorida i natrijum nitrita.
