УГОСТИТЕЉСТВО У ИЗАЗОВИМА COVID-19 ПАНДЕМИЈЕ

Sažetak


Одрживо пословање у доба COVID-19 пандемије једна је од кључних тема у угоститељству и туризму са великом популаризацијом у научно-истраживачким круговима. Зато је фокус овог истраживања био на искуставима менаџмента угоститељских објеката у Р. Србији. Ово квалитативно истраживање се бавило прикупљањем података о оперативним и економским ефектима пандемије COVID-19 на пословање 17 угоститељских објеката за пружање услуга хране и пића. Истраживање је обухватало перод рада од априла 2020. до априла 2021, као најспецифичнијег за опастанак у пословању, борећи се са изазвовима потпуног затварања, ограниченог пословања и велике преорјентације на доставу и шалтерску продају. Интервјуи су спроведени на тему перцепције и ставова менаџмента.  Предмет овог рада је одрживост угоститељства у изазовима које је наметнула пандемија. Задатак рада је био да истражи искуства власника, менаџмента и шефова различитих угоститељских објеката за пружање услуга хране и пића. Циљ рада је био да дође до података о предвиђању кризе и предузетим радњама ради опстанка на угоститељско-туристичком тржишту.
