Bližine, minerali, vitamini i antinutrienti i njihova korelacija u listiću pristupanja Senecio biafrae
Sažetak
Neuhranjenost mikronutrijenata je globalni izazov i za elite i za siromašne. Postoje obećavajuće mogućnosti za borbu protiv njega kroz konzumaciju zanemarenog i nedovoljno iskorišćenog lisnatog zelenog povrća. Senecio biafrae je nedovoljno iskorišćeno zeleno lisnato povrće bogato hranljivim materijama sa ogromnim nutritivnim i zdravstvenim potencijalima koji su ostali nedovoljno iskorišćeni. Dobio je veoma ograničenu pažnju istraživanja i finansiranja. Cilj ovog istraživanja bio je da se procene približne, mineralne vitamine, antihranljive materije i njihove korelacije među akcesijama ovog povrća. Uzorci listova aksesija su sakupljeni i analizirani standardnim biohemijskim metodologijama. Rezultati su pokazali da se aksesoari značajno razlikuju (p<0,05) u ispitivanim nutritivnim i antinutritivnim osobinama. Pripreme su bile bogate kalijumom, magnezijumom, kalcijumom, malo masti i antinutrijenata. Rezultati Pirsonove korelacije pokazali su da je većina nutritivnih parametara ili imala inverznu ili nikakvu vezu sa antinutrijentima. Sirovi proteini su pokazali značajnu (p<0,05) pozitivnu korelaciju sa suvom materijom (0,90*) i negativnu korelaciju sa cijanogenim glikozidom (-0,90*). Cijanogen glikozid je pokazao značajnu (p<0,05) negativnu korelaciju sa kalijumom (-0,63*), kalcijumom ((-0,66*) i ukupnim pepelom (-044*).Nitrat nije pokazao značajnu (p>0,05) vezu sa bilo kojim nutritivnim parametrom. Oksalat i tanin nisu pokazali značajnu vezu sa vitaminima. Fitat i tanin nisu pokazali značajnu vezu sa približnim kvalitetima i mineralima. Rezultati su pokazali da je list Senecio biafrae gust hranljivih materija i da može pomoći u ublažavanju efekata nedostatka mikronutrijenata. Varijacije i odnosi između nutritivnih i antinutritivnih parametara mogu poboljšati smislenu selekciju i poboljšanje kvaliteta ishrane kroz uzgoj.
